our artisans delicately simmer these ingredients for a long time by maintaining the water temperature properly and skim off the scum in order to make our ultimate tonkotsu soup which has innate umami of ingredients.
The soup is mixed with high-quality soy sauce to sharpen the taste and it is finally becomes our "Ulitimate tonkotsu-shoyu ramen".

Our tonkotsu soup is made from pork bones such as spines and thigh bones with a blend of chicken bones. These bones are simmered in a special large pot for more than 8 hours with its temperature carefully maintained and the scum from the ingredients are always skimmed off. This elaborate process can produce our odorless Ultimate tonkotsu soup with maximum innate flavor of the raw ingredients.
